The second-born son of the Cerea family admits that it was his father Vittorio who showed him, with his dedication and love for that profession that combined cooking and fun in the dining room, the right direction to follow: not a flash of inspiration behind the cooker, as happened first to Chicco and then to Bobo, but "Outside the Restaurant", as he recounts in his autobiographical book. Sociality, public relations, customer relations, the right suggestion for the choice of dishes or wine pairings, have become the most suitable dimension for the expression of Francesco's talent. The restaurant is conceived as a space where one can experience beautiful, joyful and reassuring moments. Hospitality and warmth preferred to form. The innovation that makes Francesco a cornerstone of Da Vittorio is the development of the external catering concept: a model that breaks away from the classic catering service, allowing the experience of haute cuisine signed by Da Vittorio to be transferred to every corner of the world - modular for 2 or 2000 people, whether in a private home or a fashionable event. A system that requires perfect organisation but also the ability to adapt to unforeseen events and last-minute changes. His most exciting memory? Personally serving Queen Elizabeth II at a dinner in Milan in 1990: going against protocol, the queen asked for a second portion of Vittorio's risotto alla milanese.
